What is a Barista? A True Story.

A coffee shop I often frequented, well before I became serious and educated about coffee, was owned by an entrepreneur. In this case, the definition of entrepreneur is a person with a type A personality who has enough money to buy a coffee shop. He was energetic and driven with no real knowledge about coffee. The previous owners trained him, and while I do not know about their background or education in the field, I have to assume that they either did not know much, did not pass on much, or the new owner was just not listening.

I mentioned that I was quite early on in my coffee ambitions, just starting to frequent coffee shops. It was just a few weeks after I learned that espresso did not have an “x” in its spelling. On one of my first visits to this shop I asked, “What is the thermometer in the milk for?” He was steaming a pitcher at the time.

He told me, “It is to make sure that the milk gets hot enough to kill the bacteria.” I am not knowledgeable in the field of bacteriology, but that is not why you use a thermometer. And experienced baristas never use a thermometer. A “real” barista will hold their hand on the pitcher. The basic instruction is to add air (the “whoosing” sound early in the process) until the outside of the metal pitcher feels the same temperature as the skin on your hand, then raise the pitcher to allow the steam to swirl the milk. Stop when the pitcher feels just a bit uncomfortably hot to the touch. From there the barista adjusts the timing and technique to the quality of the milk as they gain experience. So:

Thermometer = Amateur barista

As the months went by, and then the years, things got worse at this shop. The espresso degraded as did the cappuccinos and lattes, and the owner/barista actually told a then-new customer who stated that the drink was bitter that he ordered the wrong beverage. The customer was right as we had noticed that all the drinks became bitter as the profits dropped and he was ordering lower grades of coffee beans.

The final straw for me as a customer was when one summer I ordered a mocha smoothie from their new smoothie bar. The female PBTC (person behind the counter – it would be grossly inaccurate to call her a barista) asked me, “What’s that?”

I replied, “What’s mocha? Its coffee and chocolate.”

“That’s not mocha,” I was told.

“Mocha is chocolate and coffee.”

“No it isn’t.”

“So, what is mocha?” I asked her.

“I don’t know, but it isn’t coffee and chocolate.”

I should have waked out right there, but I said, “OK then. Please make me a chocolate smoothie and put a double shot of espresso in it when you blend it.”

“We will have to charge you extra for the espresso because that comes from that side [she points to the coffee bar] and the smoothie is from here [standing at the smoothie which was ten feet from the coffee bar].”

A couple of lessons here. When you become knowledgeable about your coffee beverages it becomes easier to spot someone who knows what they are doing, and hopefully, easier to find a quality coffee shop. The other lesson is that if you get into situations in a shop that make you feel uncomfortable or force you to give the recipe to the workers as to how to make a beverage, it is definitely time to move on.

There are good coffee shops out there that offer a friendly atmosphere as well as quality beverages. Look for them. They deserve your patronage.

80 Proof Spirits From Used Coffee Grounds

Researchers in Portugal have created an 80 proof spirit from used coffee grounds. A team from the Institute for Biotechnology and Bioengineering (IBB) at the University of Minho in Braga created the novelty spirit after collecting and drying used coffee grounds from a Portugese coffee roastery.

They heated the powder in water at 163°C for 45 minutes, separated out the liquid, and added sugar. Next, the team mixed in yeast cells, let the concoction ferment, and concentrated the sample to get a higher alcohol content.
The result? A largely non-caffeinated that seems to just meet the threshold for human consumption:

To evaluate the product, eight trained taste testers were brought in and rated the intensity of different smells and flavors in the alcohol. The judges described the drink as smelling like coffee and tasting bitter and pungent. Researchers noted that the taste could be improved with age and concluded that the quality was good enough for consumption.

On a long motorway trip, it is good to take a break, have a coffee, stretch your legs, and grab some fresh air.

But if you just need a coffee, this could be the answer, for the new Fiat 500L, which will be released later this year, will come with a coffee-maker next to the gear-stick.

The Lavazza-branded kit even comes with a sugar container, ‘pod dispenser’, and a spoon.

If you’re more of a car fan than a coffee lover, then the vital stats are that the 500L comes in a three- and five-door option with a 1.6lt, 16 valve engine.

The FIAT 500L was officially launched last week in Turin, and it goes on sale in Ireland at the end of the year.

Fiat proudly exclaims that this ‘is the first production car in the world available with a fully integrated espresso coffee machine as an accessory’.

The car drives at a coffee-spilling 103mph, and comes in for an estimated £15,500.

Coffee Linked To A Lower Death Risk From Variety Of Causes..

Not only does that delicious, steaming cup of coffee get your day started, according to a new study that appears in The New England Journal of Medicine, it might also help you live even longer as well. The research, one of the largest projects of its kind, reveals that coffee drinkers have a lower risk of death from causes like stroke, diabetes, heart or respiratory disease, accidents, injuries or infections (but not cancer) than those who didn’t drink the beverage.
Even after accounting for other factors that influence early death, like smoking or drinking too much alcohol, the results still held. Coffee drinkers appear to live longer than non-drinkers.

The researchers drew over 400,000 subjects (both men and women) from the National Institutes of Health-AARP Diet and Health Study. The subjects lived in six states as well as the Detroit and Atlanta metro areas.

When the study began, the participants were from 60 to 70 years old and didn’t have heart disease, cancer and had not suffered a stroke. Anywhere between 1995 and 1996 the subjects filled out a comprehensive questionnaire on their diet and lifestyle and were then followed until they died, or until December 31, 2008, whichever was first.

Compared to nondrinkers, those who drank coffee (3 or more cups per day) had almost a 10% lower risk of dying overall, and a lower risk of dying from many of the leading killers. In fact, death from cancer was the only exception the researchers noted. Such findings are a relief to the many who enjoy coffee each day, and yet were worried that it might be doing them some harm.

This isn’t to suggest you start drinking coffee if you don’t already. Talk with your own doctor to be sure that coffee drinking is not going to be a problem for you. There is some data that show coffee drinking might bring a short-term increase in blood pressure. If you have stomach issues, coffee may also not be a smart drink choice for you.

And because the researchers here didn’t ask people to start (or stop) drinking coffee, the results don’t show cause and affect, but rather an association between coffee drinking and a lower risk of death. Maybe those who enjoy coffee have other advantages… eating better overall, exercising more, or doing other good-for-you things that weren’t addressed in the latest research.

The study also didn’t account for how the coffee was prepared, and this might impact the compounds naturally part of the beverage. It also asked about consumption only once, at the start of the research but habits may well change over time.

We know that coffee is a complex drink that contains over a thousand different compounds. Most of these have not been studied very well. The researchers on this latest study speculate that the caffeine in coffee isn’t likely to be a factor as the rates of death for decaf drinkers (a third of the coffee drinkers in the study) were about the same as those who drank regular coffee.

Other compounds, such as the antioxidants or dietary fiber that are naturally a part of coffee, might be responsible for the benefits observed in the study. More work is needed before anyone can say for sure.
